At your table / Privacy

Privacy policy.

How we look after your booking details.

Last updated: 1 October 2026

01 / Who looks after your information?

Sage ApS, a restaurant in Copenhagen, Denmark, is responsible for the personal information described in this notice.

For privacy questions or requests, write to table@sage-kitchen.dk.

02 / What we collect when you book

When you reserve a table, we collect your name, reservation date and time, number of guests, and any email address, telephone number or notes you provide.

The form marks required fields; optional fields can be left blank. If you book for someone else, please share this notice with them. The booking form does not collect payment card details.

03 / Why we use your details

We use reservation and contact details to arrange your table, manage changes or cancellations, and answer booking questions: steps you ask us to take before a booking (Article 6(1)(b) GDPR).

Making a reservation does not sign you up for marketing. Messages about your table are service communications.

04 / Special requests and allergies

You can tell us about requests relevant to your visit. Please share only what we need to look after you, and avoid unnecessary personal information about yourself or other people.

05 / The services behind your booking

Bookings are kept in our website’s database and read only by the restaurant team who manage reservations. Our website host stores that database on our behalf.

06 / Where information is processed

We keep booking information within the European Economic Area wherever possible. If a provider processes it elsewhere, we rely on appropriate safeguards such as the European Commission’s standard contractual clauses.

07 / How long we keep it

We keep reservation details for up to 12 months after your visit, then delete them, unless the law asks us to keep a record for longer.

08 / Website, security and cookies

Our website uses only the cookies it needs to work and to keep the booking form secure. We do not use advertising cookies.

09 / Your choices and rights

You can ask to see, correct or delete your information, object to its use or ask us to limit it. You can also complain to Datatilsynet, the Danish Data Protection Agency.

10 / How availability is checked

A table request is confirmed by our team, who check the evening’s tables before replying. No automated decision is made about your booking.

11 / Updates to this notice

We may update this notice when our practices change. The date at the top shows when it last changed.
